Beer needs hops. This fact will hardly be doubted by any one. But when to add the hops in which way? There are huge differences in how the different quality ingredients of beer’s most important spice are being extracted. Solubility and volatility are to be addressed very differently for varying beer styles. Addition in the hot or in the cold, adding early or adding late, what qualities of the possible hop products are of importance to achieve which effect. These are the types of considerations that are being addressed in this talk.
